Oysters are farmed in a variety of ways. In France, they are mainly farmed in bags, on tables, a technique also known as "hors sol". They can also be bred on the ground, i.e. directly in the mud, or on ropes. In other countries, they are bred in baskets, on lines, on the foreshore or in the open sea, or in lanterns. Each technique has its advantages and disadvantages, but in all cases it's patience and a love of the craft that produce the final result.
